Fruit for this exuberant wine comes from old vine parcels of Pinot Noir and Chardonnay from the estate’s finest Grand Cru vineyards in Aÿ, Avize, and Mesnil-sur-Oger, all of which are now cultivated according to biodynamic principles. These exceptional clusters lead to a round-yet-energetic wine laden with silky texture, distinct minerality, and enough crystalline acidity and saline-driven freshness to keep your palate salivating for more. Cristal rosé ages for an impressive six years (average) on the lees in Louis Roederer’s cellars prior to disgorgement.

Brut Sous Bois is one of Billecart-Salmon’s most unique cuvées, as it is vinified entirely in oak. Crafted from the region’s signature trio of varieties (equal proportions), fruit for this wine comes from premier and grand cru-designated vineyards across the Côte des Blancs and Montagne de Reims, as well as from the right bank of the Vallée de la Marne. Post-vinification in oak casks, the wine ages for six to seven years on the lees and uses 30 to 35% of reserve wine. Expect a rich, full-bodied Champagne laden with flavors of dried fruits, buttery brioche, and hints of mushroom.

Billecart-Salmon’s Cuvée Nicolas François pays homage to the estate’s original founder, Nicolas François. Crafted from 60% Pinot Noir from the premiers and grands crus of Aÿ, Verzenay, and Mareuil-sur-Aÿ, and 40% Chardonnay from the Côtes des Blancs (Mesnil, Chouilly, and Cramant), this extremely special wine is only produced during exceptional vintages. Around ⅕ of the wine is vinified in oak, and the final wine rests for an impressive 10 years on the lees prior to release. Chiseled and structured, this top-tier wine drinks beautifully upon release, though promises to age gracefully for another 10+ years in the cellar.

Doyard’s Œil de Perdrix is an elegant, medium-bodied rosé Champagne that pairs beautifully with a variety of foods. Produced from a blend of 75% Pinot Noir and 25% Chardonnay—hailing from Aÿ and Avize, respectively— the former is vinified in steel, while the latter in oak. The wine was bottled in July of 2019 and three grams of dosage per liter were added. Medium to full bodied, the wine shows flavors of cool red berries, orange marmalade, and hints of crushed stones.

Monts Ferrés is a new cuvée from Champagne Doyard. Crafted from the 2016 vintage, fruit for this 100% Chardonnay wine comes from organically-farmed plots in the premier cru of Vertus. In the cellar, the wine is vinified in Burgundian barrels, and only first and second press juice is used. The wine is disgorged five years after bottling with just 0.6 g/L of dosage added. The estate notes that this special cuvée boasts a very high cellaring potential after release; we recommend laying this one down for as long as you can—though we wouldn’t blame you for getting into a bottle in the short term.

Now led by fifth-generation Jean-Baptiste Geoffroy, the estate spans 14 hectares across top premier cru sites like Cumières, Damery, and Hautvillers. Farmed sustainably and without chemicals, their vineyards stand out for their lush vegetation. The Geoffroys take a hands-on, passion-driven approach in both vineyard and cellar. Plantings are mostly Pinot Noir (42%), followed by Pinot Meunier (39%) and Chardonnay (19%). Geoffroy Champagnes are known for their vibrant, zesty profiles and balanced structure, making them ideal for long aging.
